Eating Wild: Wild Turkey BBQ Bites

A little sweet and a little spicy, this wild turkey recipe is a crowd pleaser. AND it is wrapped in bacon so you can't go wrong. Makes a great appetizer or main course!

I didn't shoot my first wild turkey until I was in my 30's but immediately fell in love with turkey hunting right then and there. I remember trying my best to hold still as the tom we had been calling came strutting in... it was beautiful and intimidating. I almost didn't pull the trigger I was so mesmerized. That night, a turkey hunter friend of mine cooked my turkey in a similar fashion to this recipe. Still to the day, the best turkey I have even eaten.

Ingredients:
Wild Turkey Breast (close to pound) | cut into 1 inch pieces
1 Pound Bacon | cut in half (do not use thick cut bacon)
Garlic Powder | to taste
Salt and Pepper | to taste
Brown Sugar | 1/2 cup
Ground Chiles | 1 tbsp
Ground Chipotle Pepper | 1 tsp
Ground Cumin | 1 tsp
Favorite BBQ Sauce | 1/3 cup

Directions:

Mix the brown sugar, chiles, chipotle and cumin in a small bowl. Place BBQ sauce in a small brown.

Sprinkle the cubed turkey breast with garlic powder, salt and pepper to taste.

Take cubes of turkey and wrap with the half piece of bacon. Then, roll in the brown sugar mixture, secure closed with tooth pick and place in baking dish. Repeat process with rest of turkey and bacon.

Take a pastry brush and dip into BBQ sauce and lightly dap on to turkey bacon bites... do not brush off the brown sugar mixture. Sprinkle any left over brown sugar mixture.

My preferred way of cooking these wild turkey bites is on a charcoal grill. If you don't have that, a gas grill or oven is fine. On the grill, rotate until fully cooked on all sides. In the oven, cook on a baking sheet at 375 Degrees for 20 minutes. Then broil for the last 10 minutes, rotating half way through. ENJOY!
